"Me and a friend came up with this a few years ago while trying to figure out how to use up leftover buffalo chicken wings. This pizza makes a great lunch - sliced as an appetizer for a party - also, a snack food while watching the game on TV - or a light dinner. Take your pick. Easy, quick and delicious. Perfect for leftover rotisserie chicken. These can also be made on grill."

Step by Step Method
Step 1
Pita Bred ... Brush one side of the pita with oil and season with salt and pepper. Bake on the middle shelf of a 425 degree oven for 5 minutes until slightly crisp and golden brown.
Step 2
Chicken ... Microwave for 30 seconds just to warm it up.
Step 3
Toppings ... While the pitas are still warm, brush the BBQ sauce on the side you seasoned. Top with with the chicken, red onions and cheese and drizzle on a little hot sauce. Go easy on the hot sauce, you can always add more after it comes out of the oven.
Step 4
Bake ... This time, lay a piece of foil down in the oven and place the pitas on that - you don't want the crust to burn. Bake another 5-7 minutes.
Step 5
Finish ... Top with the diced celery, celery leaves and a few more drizzles of hot sauce if you like. ENJOY!
