Step by Step Method
Step 1
Preheat the oven to 400 degrees F.

Spray the muffin (or muffin top pan) with non-stick oil'

In a small bowl combine the oatmeal and milk and soak.
Step 4
In a large bowl combine the dry ingredients.
Step 5
Mix the beaten egg, mashed banana and melted butter into the oatmeal mixture.
Step 6
Pour the banana mixture into the flour and stir just until combined.
Step 7
Spoon the mixture into the prepared pan and bake for 10-12 minutes, until golden brown.
Step 8
Remove from pan and allow to cool slightly on wire rack.
