Step by Step Method

Step 1

Preheat oven to 350º. Coat a loaf pan with cooking spray.

Step 2

In a large bowl add the flour, bran, flax, baking powder and spices. Whisk to combine.

Step 3

In a medium bowl, add the oil and brown sugar and whisk to combine. Add the eggs, whisking again to combine well.

Step 4

Whisk in the milk and vanilla. Stir in the mashed banana.

Step 5

Sprinkle the diced apples over the dry ingredients, then pour the wet ingredients into the dry ingredients and stir gently, just until combined.

Step 6

Pour the batter into your prepared loaf pan.

Step 7

Bake 50 minutes, or until the bread is golden brown and a skewer inserted into the center comes out clean.

Step 8

Cool on a wire rack 10 minutes and remove from pan to cool completely.

Step 9

Note: Baking times for regular loaf=50 minutes, for mini loaves=25-35 minutes, for muffins=about 20 minutes.

Very good bread! The oat bran and the flax meal were hard for me to locate but they made the bread a lot healthier and this bread uses my favorite spices, so I know it would be a winning recipe and it was! I was able to make two mini loafs and a small loaf (4 x 6) - next time we'll try the muffins! Thanks for sharing!
