Step by Step Method

Step 1

Preheat oven to 350°.

Step 2

Heat oil in a medium skillet, add onion and cook until tender, about 2-3 minutes, stirring occasionally.

Step 3

Add the flour and stir for another minute. Add the milk, a little at a time, stirring constantly. Add the salt and pepper and continue stirring until thick. Remove from heat and add the wine or sherry.

Step 4

Wash and pat dry the fillets and place in a pan. Pour the sauce over the fish and bake for 30-40 minutes, depending on the thickness of the fish. Serve with rice. Serves 4-6.

This was really pretty tasty, but WAY too much salt! I cut it down to 1/2 teaspoon and it still was pretty salty. I also added some Catalina Seafood seasoning since it seemed fairly bland otherwise. Next time I'll probably cut the salt down to 1/4 teaspoon, but there will be a next time because with those two tweaks this was a good way to spruce up plain fish (I used tilapia).

Sorry this was just not for us, the sauce was quite thick, I just left it in the oven for 15 minutes. we felt the milk and wine were not good parners, if i were to make it again i would thin out the sauce/
