Step by Step Method

Step 1

Preheat oven to 350F.

Step 2

In a medium saucepan, melt 2 tablespoons butter over low heat. Add the flour and stir until well blended. Cook one minute. Slowly add milk and cook, stirring constantly, until boiling.

Step 3

Let sauce cool; add chopped turkey, egg yolk, salt, celery salt and pepper. Mix well.

Step 4

Form into twelve small cones.

Step 5

Mix bread crumbs with ground sage.

Step 6

Beat egg in water.

Step 7

Roll cones in crumbs. Dip each cone in egg and roll again in crumbs.

Step 8

Place on greased baking pan and drizzle with melted butter.

Step 9

Bake for 40 minutes.

This is a perfect dish for using leftover turkey which I pulled out of the freezer that I had from our leftover Thanksgiving dinner. It's a comforting dish that was easy to put together. The only thing I did differently was to add some poultry seasoning. This will be made again this winter for it's homey and comforting element! Thank you Mikekey for sharing!

I loved the concept of these and will definitely make them again! I used chicken breast instead of turkey this time. I thought the white sauce was a different start to a croquette and loved the way it worked. I found the mixture a tad wet though when trying to form the croquettes and confess to neither of us could figure out the cone shape. Ice cream cone? Anyway, we added a few breadcrumbs and made circular patties. The patties were then pan cooked instead of baking. The flavors were mild and tasty and the croquettes were wonderful the next day too. This time I served with a Corn and Zucchini Saute and a tossed salad. I think one could adjust the flavors to fit almost any flavor profile. I know I'll be using the recipe many times in the future. Thank you for sharing a keeper!
