"A very easy side dish I like to serve during tomato season. I sometimes use regular cooking onions in this recipe."

Step by Step Method

Step 1

Preheat oven to 450 degrees Fahrenheit.

Step 2

Arrange tomatoes and onions in layers in a 9” X 9” baking pan.

Step 3

Toss minced garlic over mixture.

Step 4

Drizzle with the olive oil and balsamic vinegar.

Step 5

Season with salt and pepper.

Step 6

Bake until onions are cooked, about 15 minutes.

Step 7

Set aside and serve warm.

These tomatoes made a great side for our dinner! Followed the recipe exactly and the tomatoes were sweet and delicious. The onions cooked perfectly. I was out of basil, or I would have added it like the other reviewers. But I did sprinkle some minced parsley over the finished dish. Oregano would have been good, too. Thanks for sharing - this will definitely be made again!

So Very Good! Absolutely love how the flavor of the tomato is retained and somehow its natural flavor was further enhanced. Once it came out of the oven, topped with some garden fresh basil which matches so well with tomato. Love, Loved it! Thanks so much, Bea, for sharing this winner. Made it for FYC.

Great served as a side dish. We enjoyed this as a side for dinner tonight, made with fresh home grown tomatoes. I made this exactly as written, and got a wonderful result! The subtle sweet flavours from the balsamic and tomato go perfectly together, I topped with some fresh basil for a wonderful dish which was enjoyed by all.

I made this recipe as a side dish for Sunday brunch - Wonderful. I cut the recipe back to two servings and used white balsamic vinegar. I left the garlic at 2 large cloves and coarsely chopped them - just right. QueenBea this will be a regular brunch dish. Thanks for making this brunch special
