Heat oven to 200F and line a baking sheet with parchment paper. If you don't have parchment paper, spray the baking sheet with cooking spray.
Peel and thinly slice the sweet potato.
Lay slices on parchment paper as closely as possible.
Bake for 2 hours. Check periodically to make sure the slices do not burn. You may have to remove the thinner slices sooner, and allow the thicker slices to bake more than 2 hours.
