This is another great recipe by Gerry. The flavors are great, everything works so well together. I used rainbow trout instead of salmon and cooked this for 20 minutes, it worked perfectly. I forgot to add the parsley for presentation, but no one noticed, lol.

Simply made with Delicious results. I love how easy this was to put together with all ingredients available in my pantry. I had some fresh tomatoes on hand so added some slices. It all came out tasty. I also want to try it with some fresh basil and thyme next time which I sometimes keep in the fridge. It's a do-again especially for those busy weeknights. The only thing I would change is the timing in the oven, which I feel is a bit long. I baked it for less and it came out flaky and juicy. Thank you Gerry for sharing! Made it for PickMe Tag Game.
