Step by Step Method

Step 1

Together: Prep ingredients.

Step 2

Adult: Preheat oven to 425F.

Step 3

Together: Scrub potatoes & cut into 1/2-in thick wedges.

Step 4

Kid: Place potatoes in a medium size bowl w/the oil, garlic salt & Mexican seasoning. Stir well to coat potatoes w/oil & seasonings.

Step 5

Together: Transfer to a large baking sheet & spread into a single layer. Bake for 25-30 min (stirring several times) until crisp & golden brown.

Step 6

Together: Top w/cheese, beans, tomatoes, olives, onions & chiles. Bake for 5 min more to melt the cheese.

Step 7

Together: Pick optional adds to serve from salsa, guacamole & sour cream.

Daily Inspiration

Made these potato nachos for today's football game. The concept was great for these nachos, but we felt there wasn't enough flavor on the potatoes. Overall, with the added ingredients these nachos were a nice addition to our lunch today.

Anything with the words nachos and potatoes in it is sure to please at our house. We ended up using the whole can of black beans and more tomatoes, all the optional toppings, plus lime wedges to squeeze over, and it was all really super together.
