"These delicious little frittatas are baked in muffin tins. It's great way to cook eggs for a lot of people. They're like little quiches without the crust. They are so easy and flexible, you can use any omelette or quiche ingredients in these. This is a small version: breakfast for two, which makes 6 muffin size frittatas."

Step by Step Method

Step 1

Preheat the oven to 375 degrees and spray a muffin tin (just 6 muffin cups) with nonstick spray.

Step 2

Whisk the eggs, milk, and pepper in a large bowl to blend well. Stir in the ham, cheese, and parsley.

Step 3

Fill prepared muffin cups almost to the top with the egg mixture.

Step 4

Bake until the egg mixture puffs and is just set in the center, about 15 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. They will deflate a bit.

What tasty low carb frittatas...I used half and half instead of the milk otherwise made as posted...this was a quick and easy recipe to make...I can see adding in red peppers or some broccoli...thanks for sharing your recipe...made for Alphabet tag game in FF&F...

What a great easy economical recipe. Instead of mixing in the ham, Cheese & parsley I placed a small amount in each muffin cup prior to adding the egg. However if you do this you will have to use mini muffin papers or something because mine stuck to the pan. It is neat though to have an even amount of ham etc in each. I served them with Thai chili sauce. I will be making these again for sure

Delicious breakfast that the DM and thoroughly enjoyed. I made as per recipe but could only fill 5 1/2 patty pans liners that I used to line the muffin holes so I beat up another egg with some milk and added a little ham and cheese and that filled up the 5th and the 6th beautifully and baked for 25 minutes at 175C fan forced.
