Baked Mini Frittatas
"These delicious little frittatas are baked in muffin tins. It's great way to cook eggs for a lot of people. They're like little quiches without the crust. They are so easy and flexible, you can use any omelette or quiche ingredients in these. This is a small version: breakfast for two, which makes 6 muffin size frittatas."

What a great easy economical recipe. Instead of mixing in the ham, Cheese & parsley I placed a small amount in each muffin cup prior to adding the egg. However if you do this you will have to use mini muffin papers or something because mine stuck to.... Read more
- 4 large eggs
- 1/4 cup milk
- 1/4 teaspoon black pepper
- 2 to 3 ounces ham (chopped ham)
- 1/4 cup grated Monterey Jack cheese
- 1 tablespoons chopped parsley (fresh)
What You Will Need
No special items needed.
Preheat the oven to 375 degrees and spray a muffin tin (just 6 muffin cups) with nonstick spray.
Whisk the eggs, milk, and pepper in a large bowl to blend well. Stir in the ham, cheese, and parsley.
Fill prepared muffin cups almost to the top with the egg mixture.
Bake until the egg mixture puffs and is just set in the center, about 15 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. They will deflate a bit.
