Step by Step Method

Step 1

Heat oven to 400° F.

Step 2

Pat fish pieces with paper towels and place in a shallow roasting pan. Brush with butter and sprinkle with salt.

Step 3

Bake for 15 to 20 minutes until fish flakes easily with a fork.

Step 4

Heat garlic and olive oil in a saucepan over medium heat until garlic is aromatic, about 3 minutes.

Step 5

Add tomatoes, pine nuts and raisins and stir until blended.

Step 6

Serve hot over baked fish.

We now eat fish or seafood for 50% of our meals & I'm always looking for new & tasty ways to prepare it so we don't get bored. Cod was on the menu tonite. I esp liked your recipe for its low-salt content as Siggi is salt-restricted since his transplant. This is an unusual flavor combo, but it eventually won me over. Siggi not so much, but he's a purist & favors Icelandic standards. I chg'd the seasoning a bit by adding dill & Old Bay, but otherwise made as written. Thx for sharing this recipe w/us, Mike.
