Baked Cranberry Relish
"Slightly modified RecipeZaar recipe from 2002, by Terri F. This is the easiest and one of the best cranberry relishes I've ever tasted! Note: Toast walnuts in a medium-hot iron skillet, constantly stirring, until fragrant, about 2-3 minutes."

- 4 1/2 cups fresh cranberries
- 1 1/4 cups brown sugar (not packed)
- Dash of salt
- 2 teaspoons orange extract (or 1/2-1 teaspoon orange oil)
- 1 cup walnuts (toasted and chopped)
- 1 cup orange marmalade
- 2 tablespoons lemon juice
What You Will Need
- Cooking spray
- Covered baking dish, or cover with foil
Preheat oven to 350 degrees F.
In a 2 quart baking dish sprayed with cooking spray, mix cranberries, sugar, salt, and extract.
COVER DISH and bake for 1 hour.
Stir in walnuts, marmalade, and lemon juice.
Chill until serving time.
