Step by Step Method

Step 1

Coat asparagus spears with 2 tablespoons melted butter, then season with salt and pepper lightly.

Step 2

Arrange in an oven-to-table shallow baking dish large enough to hold the asparagus in 1 layer. Evenly distribute cheese bits over asparagus, then sprinkle with bread crumbs. Drizzle remaining 2 tablespoons melted butter over bread crumbs.

Step 3

Bake at 400°F until asparagus is tender-crisp and the bread crumbs lightly browned, about 10 minutes.

The combination of the goat cheese and asparagus is fabulous. I was a bit heavy on the cheese and light on the crumbs with no butter - It worked We have a local goat cheese maker - Happy Goat farm and their chesse is quite mild and creamy. Thanks Meggins for another lovely recipe. 30 Dec14 Made again and this time I added the asparagus to a plain omelet - Just wonderful
