"A great little recipe from Sunset magazine. With all the bacon and fat, you might want to serve this with low-cal accompaniments! But sure is good to indulge once in a while! The citrusy vinaigrette helps cut the richness of the avocado and the bacon just adds... well... goodness!!!"

Step by Step Method

Step 1

Cook bacon in a large frying pan over medium-low heat until crisp. Drain on paper towels and let cool. Remove pan from heat and discard all but 2 tbsp. bacon fat.

Step 2

Divide avocado wedges among 4 plates.

Step 3

Heat reserved bacon fat over medium heat. Add garlic, 1/4 cup water, the lemon juice, and sugar and simmer 1 minute, stirring.

Step 4

Season with salt and pepper. Stir in parsley and crumble in bacon. Immediately pour over avocado wedges and serve.

Daily Inspiration

This salad was delicious. The only change I made, by necessity, was to add cilantro vs. parsley. We served this with some enchiladas suizas tonight. Great pairing.
