Step by Step Method

Step 1

In a dish combine the vegetables and olives (bell pepper - olives); marinate with the dressing for 30 minutes.

Step 2

On a serving dish arrange the avocado halves on top of lettuce leaves; and surround them with the marinated vegetables; add a teaspoon of the dressing on top of each avocado half and pass remaining dressing separately.

Step 3

To make the dressing: combine dressing ingredients in a jar and shake well. Chill until ready to use.

This is a nice fresh tasting salad that was quick and easy to put together. Next time I will use fresh tarragon in this as the dried did not come through enough for me.
