Step by Step Method
Step 1
Preheat oven to 200C.
Step 2
Line a baking tray with baking paper.
Step 3
Combine maple syrup and sugar in a bowl.
Step 4
Place bacon on the tray and brush evenly with the maple mixture and bake, turning occasionally, for 15 minutes or until caramelised.
Step 5
Meanwhile, brush bread with a little oil and preheat a chargrill to high and cook for 1 minute each side or until toasted.
Step 6
Place avocado, fetta, spring onion and lemon juice in a bowl and using a wooden spoon to coarsely mash.
Step 7
Top toast with avocado mixture, bacon, rocket and chives.
