Ava's Not Your Usual Nutty Fruit Cake
"My friend Faye shared this recipe with me... "Here is my mother's recipe for fruit cake that we have been making for years at Thanksgiving. She put this recipe together because she couldn't find one that had enough nuts in it to suit her. It does have a lot and it is rich, but oh so good". "
- 1 cup sugar
- 1/2 cup butter
- 4 eggs, whites and yolks separated
- 1 teaspoon vanilla
- 1 quart pecans or walnuts or mixed
- 1 cup self-rising flour, heaping
- 1 pound dates, chopped
- 1 (6 ounce) bottle Marachino cherries
What You Will Need
No special items needed.
Step 1
Preheat oven to 350 degrees. Cream sugar, butter and egg yolks.
Step 2
Add vanilla.
Step 3
Sift flour over nuts.
Step 4
Mix all ingredients together, until all is moistened well. Don't overmix.
Step 5
Fold in egg whites last.
Step 6
Bake in a greased loaf pan, for 1 hour 10 minutes.
Step 7
Cool.
