  • 2 cups low sodium fat free chicken broth
  • 2 cups cauliflower florets, chopped
  • 1 cup chopped carrots
  • 1/2 cup onions, chopped
  • 1 cup non-fat milk
  • 1/4 teaspoon ground nutmeg
  • Fresh ground black pepper, to taste

  How to Make
 
 

Step 1

In a large pot, combine broth, cauliflower, carrots, and onions. Bring to a boil. Reduce heat and simmer 7 to 10 minutes, until vegetables are tender.

Step 2

Puree in a blender or food processor, in batches. Return to pan.

Step 3

Add milk and heat thoroughly, but do not boil.

Step 4

Stir in nutmeg and pepper. Serve.

I made this as written except I was naughty and added heavy cream to it! So yummy! My DD kept coming back for 2nds, 3rds, 4ths and after I removed it from my stock pot, she licked the pot! I actually thought it tasted delicious even before I added the cream as just a puree. Made for Recipe tag.
