Asparagus Pasta Salad With Creamy Lemon Dressing
"A nice twist on a pasta salad. Fresh asparagus and a creamy lemon sauce make this a quick easy dish. Pair this along a grilled fillet of fish or chicken breast and it makes for a very nice easy dinner. And ... this dressing is also very good over salad greens. Note: If you make this ahead, I like to add most of the dressing to the pasta - but reserve some. The pasta will soak up most of the dressing when you first make it; so, save some of the dressing to add right before serving."

We love it! Nice light pasta salad with a delicious creamy dressing that is awesome in flavor!.
- 10 to 12 ounces dry penne pasta
- 2 pounds asparagus (fresh, trimmed and cut in 2" pieces on an angle)
- 1/2 cup diced scallions (diced in 1/2" pieces on an angle)
- 1 lemon, whole (cut in half and thin sliced)
- 1/2 cup grated cheddar cheese (I prefer sharp cheddar)
- FOR DRESSING
- 4 tablespoons mayonnaise (no Miracle Whip)
- 3 teaspoons Dijon mustard
- 4 tablespoons chicken broth (low salt)
- 2 tablespoons fresh lemon juice
- 2 teaspoons garlic, minced
- Kosher salt, to taste
- Fresh ground pepper, to taste
What You Will Need
No special items needed.
Dressing ... Whisk all the ingredients in a small bowl and set to the side until the pasta and asparagus are cooked.
Pasta and Asparagus ... In a large pot of salted water, boil the pasta according to package directions. Approximately 2 minutes before the pasta is done, add the asparagus, and cook until the asparagus is crisp tender. Then, drain the pasta and asparagus; making sure to rinse under cold water to stop the cooking process. Transfer to a large bowl to cool slightly.
Finish ... Add the scallions and dressing; tossing lightly to combine. Then, add the cheese and lemon slices.
Serve and ENJOY! ... This is best served at room temperature; but, it is equally as good served cold. This is a wonderful salad for picnics, BBQ's, potlucks, parties, entertaining, etc.
