Asparagus Pasta Salad With Creamy Lemon Dressing

"A nice twist on a pasta salad. Fresh asparagus and a creamy lemon sauce make this a quick easy dish. Pair this along a grilled fillet of fish or chicken breast and it makes for a very nice easy dinner. And ... this dressing is also very good over salad greens. Note: If you make this ahead, I like to add most of the dressing to the pasta - but reserve some. The pasta will soak up most of the dressing when you first make it; so, save some of the dressing to add right before serving."

  Ingredients

  • 10 to 12 ounces dry penne pasta
  • 2 pounds asparagus (fresh, trimmed and cut in 2" pieces on an angle)
  • 1/2 cup diced scallions (diced in 1/2" pieces on an angle)
  • 1 lemon, whole (cut in half and thin sliced)
  • 1/2 cup grated cheddar cheese (I prefer sharp cheddar)
  • Salt
  • FOR DRESSING
  • 4 tablespoons mayonnaise (no Miracle Whip)
  • 3 teaspoons Dijon mustard
  • 4 tablespoons chicken broth (low salt)
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons garlic, minced
  • Kosher salt, to taste
  • Fresh ground pepper, to taste

  How to Make
 
 

Step 1

Dressing ... Whisk all the ingredients in a small bowl and set to the side until the pasta and asparagus are cooked.

Step 2

Pasta and Asparagus ... In a large pot of salted water, boil the pasta according to package directions. Approximately 2 minutes before the pasta is done, add the asparagus, and cook until the asparagus is crisp tender. Then, drain the pasta and asparagus; making sure to rinse under cold water to stop the cooking process. Transfer to a large bowl to cool slightly.

Step 3

Finish ... Add the scallions and dressing; tossing lightly to combine. Then, add the cheese and lemon slices.

Step 4

Serve and ENJOY! ... This is best served at room temperature; but, it is equally as good served cold. This is a wonderful salad for picnics, BBQ's, potlucks, parties, entertaining, etc.

Delicious! I subbed white wine for the chicken broth...otherwise made as posted...served it with a nice salmon...made for "Pick Me" tag game...Rest in Peace sweet Kim...

It's so good! I made it to have along with some fish my dad got off the boat. I have to say this is an excellent side to have with just about anything. You could easily add other vegetables in place or along with the asparagus. The dressing is yum yum yummy!
