Step by Step Method

Step 1

Preheat oven to 400 degrees F; grease 12 muffin tins.

Step 2

In a large bowl, mix bran, applesauce, egg, margarine and brown sugar; let stand for 5 minutes.

Step 3

In a separate bowl, blend flour, baking powder and cinnamon; stir in bran mixture just until blended, batter will be lumpy.

Step 4

Stir in raisins.

Step 5

Spoon batter into muffin cups and bake for 15 to 18 minutes, or until a toothpick inserted in the center comes out clean.

Step 6

Remove from pans; cool slightly.

Step 7

To prepare glaze, blend powdered sugar and applesauce until smooth; drizzle over muffins.

Haven't been eating many muffins this past while but have to say this one made for a great treat at coffee time. Made as posted using the optional raisins. I heated the applesauce before adding the icing sugar, the muffins topped with the drizzle the added touch that makes these special!
