Step by Step Method

Step 1

Sprinkle chicken with thyme, salt and pepper. In large frypan, heat half of the oil over medium high heat; brown chicken all over. Transfer to plate.

Step 2

Add remaining oil to frypan. Cook apples and onion, stirring occasionsally, until golden, about 5 minutes. Add apple cider, bring to boil, stirring and scraping up brown bits from pan. Return chicken to frypan. Cover and cook over medium low heat, turning once, until no longer pink inside, about 7 minutes. Transfer chicken to serving platter.

Step 3

Whisk vinegar with cornstarch; whisk into frypan and cook, stirring, until glossy and thickened, about 1 minute. Pour over chicken.

This recipe was so yummy that we dug into it totally forgetting to take a photo. It was even better the next day after the flavors totally meshed together. I think this recipe would be amazing with pork too. True comfort food. Made for Derf's Cookathon.

This is a delicious recipe. Great blend of flavours. A do again recipe for sure.  The chicken is exceptionally tender.  Thanks Derf for yet, another, tasty dinner 4 June 17 Apple Chicken has a lovely smooth delightful flavour. Be sure to follow the cooking instructions - if you overcook the chicken will be dry.

FANTASTIC!!! HEALTHY TOO! I was super impressed with this recipe, it was so easy to make with gourmet results. I used frozen boneless skinless chicken breast tenders, 1 golden delicious apple and one double red crisp apple, a red onion, and lite apple juice. I noticed I cut my apples into rings instead of wedges like everyone else...a little more work, but I thought it was pretty. The apples cooked to a perfect crisp tender consistency. Thank you for this KEEPER recipe Derf! I will be repeating it soon. Made for the Billboard recipe tag game.

This recipe has such good flavor and it's quick and easy too! In fact, I'm going to keep this in my "mental file" for company meals. I loved it and am looking forward to leftovers, except I will have to make more apples & onions because they are all gone!!!

Just love the flavour of this dish! I used 2 chicken leg/thighs, 1 granny smith apple and it was delicious. Even DH who is not a fan of fruit with his meat, liked it. As I used legs/thighs, after I browned them I put them in a 350F oven to finish cooking while I made the sauce. Realized as I was browning the chicken that I didn't have apple juice...so what I did was take a can of unsweetened apple sauce and strained the liquid to make 1/2 cup. Worked like a charm. Will definately be made again. Thanks for sharing. Made for Billboard Recipe Tag.
