"This was in our local paper today (13th February 2015) and was submitted by Vince Garreffa a very respected butcher and considered one of the best in the state and was submitted by reader to him. A very easy recipe for someone who may not cooks much and wants to impress that someone special."

Step by Step Method

Step 1

Blend everything except chicken and chilli.

Step 2

Pour liquid into a bowl and marinate the chicken in the fridge overnight, or a minimum of 4 hours.

Step 3

When ready to cook the chicken, place it on a flat tray skin side up, and bake in a pre-heated oven at 180C for 15 minutes.

Step 4

Now turn chicken over and cook for another 10 minutes.

Step 5

Turn over again to skin side up and cook for a further 5 minutes or until juices are no longer pink when pricked with a skewer.

Step 6

Serve chicken hot with as much sauce as you can save from the roasting pan.

Step 7

Serve with salad on a hot day or mash on cool days and garnish chicken with chilli if desired.

I marinated for 6 hours. The chicken took on a slight orange flavor, but not very strong. I used skinless boneless thighs since I had those on hand, and they turned out very moist and tender. They were a big hit.....on person ate 8 thighs!!
