Step by Step Method

Step 1

Mix the ginger, garlic, coriander, turmeric, and 1/2 cup water in a small bowl. This is the wet masala. Set aside.

Step 2

In a large pot, warm the oil over medium-high heat until shimmering but not smoking. Add the Serrano pepper, wait 30 seconds, and then add the cumin seeds and wait until they're done spluttering.

Step 3

Add the wet masala (careful, it will also splutter). Cook until the paste thickens, deepens in color slightly, and oil oozes out of the perimeter of the masala, about 2 minutes.

Step 4

Add the cauliflower and potatoes, stirring to coat the vegetables with the masala. Season with salt and add 1/2 cup water.

Step 5

Cover and cook over medium heat 10 to 15 minutes. Then, remove the lid, stir, and cook until the cauliflower and potatoes are cooked through, about 5 minutes.

Step 6

Garnish with cilantro and serve.

I didn't really know what to expect - I don't have a lot of experience with Indian food; I followed the original directions without the peas and used a poblano pepper b/c I'm a wimp. I may have had too large of a cauliflower in relation to the amount of sauce. Anyway, I'm glad I tried it and will be adding peas the next time around! And congrats on the Super Bowl!

Aloo gobi is always a hit for me. I like my Indian dishes highly spiced, so upped the spices a bit. Also love to squeeze a little lemon over them at the end too. Very yummy!

Daily Inspiration

This dish is so delicious and it really hits the spot with the spices. Loved the use of the potato and cauliflower -- they go together very well. Will definitely make this dish again.

Lovely easy veggie curry! I used the Serrano pepper which I left the seeds in half of it. Just the right amount of heat for us. Will be making this again. Thanks for sharing.
