  • 2 tablespoons butter
  • 2 tablespoons peanut oil
  • 1 large sweet onion
  • 43 ounces canned whole potatoes (3-cans)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)

What You Will Need

No special items needed.
  How to Make

Step 1

Open cans and remove water.

Step 2

Dump potatoes out on a paper towel and blot excessive moisture off.

Step 3

Dice onion.

Step 4

Slice whole canned potatoes in to 1/4 inch slices.

Step 5

Add 1 tablespoon butter to skillet and saute onions for 10 minutes stirring frequently on medium low.

Step 6

Remove onions from heat, set aside.

Step 7

Add oil and remaining butter to pan and then add potato slices.

Step 8

(WARNING: Beware of splatter!!!) Turn heat up to medium high and cook potatoes, flipping frequently allowing potatoes to brown.

Step 9

The longer you keep the potatoes in the pan, the browner they will get. (I cook my potatoes for an hour.)

Step 10

After the potatoes have browned to the desired color, add the onions back into the skillet and mix together.

Step 11

Sprinkle garlic powder and (optional cayenne pepper) over potatoes and mix thoroughly.

Step 12

Cook mixture for another 10 minutes. Serve and enjoy!

Very tasty and good. Made a good fried potato dish would be good with sausage or bacon. I loved how the potatoes turned brown and crispy. Unfortunatly my area -the oregon coast does not supply items unless they sell a lot so I had to boil some potatoes as canned whole potatoes are not available at the store I went to in a larger town there deffinately not available here in the small town I live in -  except sweet potatoes

Very tasty! And easy. Went great with pork chops. I love a dish that I can put on the stove and just check now and then. I left mine about an hour, as recommended.

Excellent! Potatoes are considered a treat meal at our house, there's no doubt I picked a recipe that was just that. Made for a great supper. Not having the canned I went with using potatoes boiled and cut in I/4 inch slices, then followed through as posted. The aroma was such that we could hardly wait for them to be done! I'm sure I saw canned potatoes at Superstore, will check for them next city shop. Think they would be great to have on hand when pressed for time. Added the optional cayenne which we enjoyed.
