"These are so simple; and so quick to prepare. If you have guests; these are perfect to serve at breakfast or brunch. Make the mix the night before; then, just bake in the morning. Often when I have guests that stay over; I love to do a simple breakfast bar. Fruit salad, bagels w/toppings, muffins, bacon, and these. It makes it easy on you; and, easy for your guests. They are also to reheat ... if you happen to have leftovers."

Step by Step Method
Step 1
Mix ... Add the eggs first; and beat until frothy and creamy. Then add all the other ingredients; and, beat or mix until combined.
Step 2
Bake ... Although you can use a regular size muffin tin for these; I love to use my mini muffin tin. Spray lightly with a non-stick spray; then, fill your tin. Bake on the middle shelf; in a 350 degree preheated oven. About 15-20 minutes for the mini muffins; or, 25-30 minutes for a classic sized muffin. Once the muffins are set, and firm to the touch; they are done. You can also stick a toothpick in the center ... if it comes out clean, they are done.
Step 3
Serve and ENJOY! ... They should pop right out of the pan. Then, plate and serve. Kids and adults both love them; and, they are just the perfect bite. As mentioned above; great for a breakfast bar with guests. But, also great on weekends, when everyone seems to get up at different times; and, everyone is on the go.
