Gummy rice fix

Yesterday I made some cilantro-lime rice and it turned out rather gummy (probably didn't use enough water). So today, with the leftovers, I made patties out of them and coated them with some seasoned panko bread crumbs and fried them. Topped them with some cilantro-dill sauce made with equal parts mayo and sour cream, 1 teaspoon each of finely chopped dill and cilantro, and thinned out with some lemon juice. They turned out pretty good. If you're using plain rice, add some finely chopped scallions and whatever else you like.

Your fix sounds wonderful...will have to keep it in mind...and not just for gummy rice. Thanks for sharing your tip! :D
