Found a recipe for Apple Curd. The person is not from the US, need help with measurements. Calls for 160g of caster sugar (not sure what that is) 80g of butter, and she said three apples not sure what kind, but I can "play" with the different flavors. Unless, someone can suggest a very flavorfull apple.

MG I think caster sugar is a sugar that has a texture between granular and confectioners sugar, as far as apples go I`m sure any apple would be good, I would go with a mixture of baking apples...I think 80 grams of butter would be about 5 3/4 tablespoons, 160 grams caster sugar would be just less than a cup.
