What is your favorite....
Vegetable?
This is a hard question for me. Aside from onions and bell peppers which I add to almost every dish...I think asparagus (those little green sticks as hubby calls them) would have to be my pick. A close second would be cabbage. I adore cabbage. Its easy to make, you can make it differently to add diff tastes, its just a great veggie to me. But asparagus...I just love that taste. I like it in anything. I think its a veggie that often gets overlooked. I do not like it boiled....roasted or pan fried is my way to eat it. I hate tinned asparagus, that slimy, mushy canned stuff turns my stomach. Fresh, prepared anyway except boiled is just fine with me. It works with so many spices, but my recent fav way to make it, is roasting with balsamic. Thank you Mikekey for that great recipe! OMG just wonderful!

I would have to say Zucchini
I have a really hard time with this question as well. Cabbage, green beans, and asparagus are right up there.
I also don't count onions, peppers, celery; because they are used in almost everything I cook.
Zucchini I find very flexible.
- fried and served with a dip
- baked in planks with a marinara sauce
- grilled, plain with lemon pepper
- grilled and served with a pistachio sauce
- used in bread, brownies, muffins
- cut in ribbons as a pasta
- pureed as a sauce over pasta
- stuffed as boats and filled with a bread stuffing/veggie stuffing/sausage stuffing
- sauteed with tomatoes, onions, peppers, and olives
- made into a ragu with other ingredients
- pan sauteed with onions, olive oil and seasoning
- souflees, quiche, fritatta as well
- soup, warm or cold
There are also, so many other options.
BY FAR, MY FAVORITE

Ohh, I love tomatoes. Sheesh, how did I forget about tomatoes? But I am still sticking with asparagus. I just got home from work, had a chicken patty (Frozen, breaded type) Then remembered I had asparagus in the crisper. So I roasted a handful, well actually I had a whole plate of it! With balsamic! Pure heaven!
