Another Hot Weather Dinner

We are still in the mid 30'sc 90'sf so it means easy cold dinners. I have just posted a new 7 grain salad, had some left over bean salad, bought a yam mixedgreen salad and did a smll chickenskewer Cilanto/lime

Thanks Bea. I am getting to be a fan of Kale. I find chopping it in my mini chopper makes it much easier to chew. Great flavour. Sounds like I am toothless - not so but Kale can be a bit tough

I love Kale but find it easier to eat when I mix it with another type of lettuce. :P

Looks like a great summer salad.
B, if you massage the kale. I know, sounds strange, but, literally take it in your hands and massage; then chop - it breaks down the cellular structure; and, it becomes very tender. Also, dress the kale first for about 30 minutes; then, add the other ingredients.

But your dinner looks delicious. We were 107 heat index yesterday; I can relate to the heat.
