Potato Salad, Kale Salad & Prawns

We are having a heat wave - High 30C (90 plus) so it is simple cool dinners. The kale salad is a favorite and it keeps for uo to 3 days so you can make a full recipe even for 2 people, The potato salad recipe will be posted later today. The prawns are just mainated in Tuscan Olive oil Dressing. I did the prawns stove top - 8 mintes

Great looking cool meal. I printed out the kale recipe for my RV cookbook. It gets way to warm when we are in the Washington Okanogan and we hate running the air conditioner for more than an hour. I can make this up in the morning and serve it outdoors at meal time.

It looks absolutely wonderful. I love kale; but, right now, I can't grow it. Have to get it at the market. But looks delicious. Perfect for summer time food. We have been almost 90 for the last 2 months; but, we all have AC too. But, it is hot working outside.

I will have to try that next time I get some at the farmers market.
