Marinated Cukes and Swiss Chalet Chicken

This has been our favourite rotisserie chicken for ages. We bought a new BBQ and we didn't buy a rotisserie to go with it yet so I made this in a roasting pan and put a bunch of balls of foil on the bottom so it wouldn't sit in the bottom of pan. It worked perfectly!

Lovely chicken in the roaster! Cukes I'd probably put in a little dish because every time I try something like that, the dressing runs everywhere.
I was just thinking earlier about doing hendl chicken for Oktoberfest. I hope mine looks as nice as your Chalet chicken.
Did that woman contact you? I sent her an email and she mailed me back saying she would. She didn't discuss payment with me (unusual) so I hope she is not running on cheap.

Thx Sue, I would of probably put those cukes in a pretty little dish had I been at home. I should really bring some "Photo Worthy" dishes at camp. Everything is usually on a white foam plate when we are there :lol: :lol: :lol: :lol:

That lady never contatced me which is fine because you mentioned it was for the end of June and we are almost there :D

Thx Bergy, I must admit I did have the skin off that plated thigh and it was marvelous. The cucumber salad is really nice and tart :)

It still looks absolutely delicious! That is one PERFECT chicken; and, I could eat cukes every day.

Thx Kim, I could eat cukes everyday, this recipe is nice. The chicken I could eat cooked this way every day also, lol..

Agree, there are just some foods that are addictive. Add pasta on that list ... but, that is not the best idea, lol.

So true Kim, pasta is up there too. So many ways to have it....... But not good for the waistline :lol:
