Eggs On Toast with Sauteed Dandelion Greens & Mushrooms

A gem of a recipe. - I always thought that dandelion Greens were bitter - not so, they were delish. I didn't do Texas toast - I used 16 grain toast, buttered. I made the recipe for one still using 2 eggs. I will make this recipe again - I have a lawn full of dandelions

The only dandelion thing I have ever tried is when I was a kid and my parents made dandelion wine! LOL I was a kid, so no idea if it tasted good. My yard doesn't have them! The only weed we have are clovers. Sad LOL Not really, hate dandelions in the yard! Hate the clover too, but they are common here. Looks good Bergy, I would try it if we had them!

Dandelion greens are delicious. That looks fantastic. I love those perfect eggs. That is a great breakfast/brunch.
