Crustless Quiche

This was broccoli, mushroom, onion, peppers, swiss; and parm on top. http://www.recipezazz.com/recipe/easy-c ... uiche-2313 (just edited it, due to a couple of errors), sorry.

But, it is a basic recipe which you can adapt to any ingredients.
Served last night with mixed greens and heirloom tomato slices. Easy dinner.

Easy and quick QB. But thank you. A good way to use up stuff. And, perfect leftovers too. I just had a piece for lunch. The rest is in the freezer.

I didn't know you could freeze quiche :? Does it change the consistency of it??

NO QB, I freeze it all the time. I usually make 2 at a time and freeze for later on. Just thaw in the fridge and reheat. Perfect.
