I never had a palette for tofu, but big compliments on your lovely looking photos. you make tofu look good Bergy!

I have to say; I'm not the biggest fan. However, I have had several tofu dishes I really enjoyed; and, honestly, if someone told me it was tofu, I wouldn't of known. So, when there is a good recipe ... it's good.
And, these always look delicious . I love your second plate; and, that drizzle of sauce is perfect.

I like tofu! Different kinds of tofu go very different ways.

I think we are resonating, first the szechuan green beans, and I had already planned to work up a recipe for mala tofu bites, Mine will be a little different: baked tofu, cut into cubes, then put into a fiery mala sauce. I did something similar before but with a Korean type marinade. This will be definite Szechuan.
Thing with tofu is that is has no real flavor and all the flavor must be infused and imported into it. If it tastes bad, it is because bad things are put on it.
Texturally, it can range from velvety soft to firm like meat, depending on the type and also the prep.
But I know you know all that already, having made tofu often. But many people don't know that.
