Sue I took liberties with the veggies (clean the fridge but I made your sauce exactly and it is perfect. My picky friend loved it

Nice pics! And that is exactly how it is supposed to me made, as 杂碎 (tsap tsuey) is an Americanized Chinese dish made from leftovers and bits of this and that. :)
Even with pan fried noodles, those are usually leftover too. :D

Most dishes have disputed origins. But that one seems more Americanized, so I believe it was made here by one of those two.
Authentic Chinese is rarely seen in North america, and places that have it you usually have to ask for the traditional menu and hope it is written in English. Sometimes they will put the name in English and nothing more. Many of those things are made with offal or have unusual textures, tastes and temperatures (often cold). About the most mainstream thing on those menus is the noodle soup, which is kind of like a big bowl of Chinese pho.

Looks great! You sold the recipe for sure! I will make this with leftover turkey from Xmas dinner.
