Peter Reinhart's Lavash

This is very good cracker-bread. I took a trick from JoeV and used a pasta roller to produce paper-thin strips of dough but have rolled it out with a rolling pin before. Some in the family like it thicker, but I enjoyed these. The recipe is from "The Bread Baker's Apprentice" but is found easily by Google online.
