Gingered Yellow Split Pea and Sweet Potato Soup
I tried to post the recipe earlier, but it didn't take; then, the site went down.
No problem, just try in a bit.
Definitely a keeper meatless soup. Could be vegetarian too, but I used chicken broth. Easy and delicious.
It has ginger, onions, celery, garlic, sweet potatoes, peas; and pepitas (pumpkin seeds).
I served with a fresh mozz pesto baguette. Easy light dinner.

Thx, it is a great simple soup; and really creamy. I was very happy with it. NO cream either; yet really rich.

Yep, no cream, just pureed. Just posted, so, won't show up quite yet. The only cream if the yogurt dollop on top.
Just veggies and broth is all; which I love.

Welcome, I really enjoyed it for a meatless soup. You could always add some crispy ham or bacon on top, if you wanted too. So, it is really flexible.

Thx B, it is really tasty; and pretty easy. I like it because it is meatless; and, light, but still filling. The recipe is approved now. The ginger is the best part.
