Meatloaf Quesadillas

No Recipe here guys ... just good comfort food.
Leftover meatloaf. Rather than a sandwich, make a quesadilla.
I sauteed 1 small onion sliced, 2-3 mushrooms; and, a couple of slices of meatloaf.
Added provolone, and make the quesadilla. I didn't have lots of sauce; so, I did mix a little ketchup and brown sugar together to add to the mix. Just a small spoonful.

On the side, creamy potato soup. This was as the base - http://www.recipezazz.com/recipe/creamy ... -soup-7781; but, I added leeks, celery root; and a bit more cream to this version.

Thx guys, it was a good way to use up the meatloaf; rather than just a sandwich. Yummy on a cold night.

It was Dis ... just a few ingredients turned a couple of small pieces of meatloaf into 2 quesadillas. Love those leftovers!

Any time there is a list of ingredients and how you asemble them that is a recipe, so why not post it.?
