I think there are 2 dinners I make which I can eat, day 1, 2, and even a 3rd night.
Thanksgiving and St Patty's Day - Corned Beef and Cabbage. Now, I make turkey often; but, I'm talking the whole dinner like you. It isn't something where I make the whole dinner that often; so, when I do ... I can't get enough of it, lol. Love it!

Sue I like Pete & Mmm repeat. I agree KC when you do the whole thing make enough to have it again. Like you I usually change leftovers but not the turkey
But my favorite is next day turkey, stuffing & cranberry sammies.
