Upsides down Banana Cake

Post by Dissie » Tue Sep 30, 2014 12:52 am

I found this recipe on a blog. It looked so delicious I had to try it. It makes 2 cakes because of the 8 inch rounds and the cake mix it uses. Sicky sweet when its hot, much better after spending the night in the fridge. It is basically a pineapple upside down cake with banana and no pineapple. I thought it was good, but needed more banana taste. Hubby said he liked it, but the half of the cake I kept, was thrown out. It was good, but needs tweaking. It has coconut in it, and why? I have no idea, it didn't really add flavor so much, maybe she tried to add texture? Not sure, like I said, needs tweaking!

Dis, my friend makes a banana cake. NOT upside down; but, it does have baked bananas on top.
However, she uses banana baby food until the cake mix to give it extra flavor.

I have had the cake; it's really good. She sent me the recipe, but never tried it. Maybe some mashed banana in the mix might work to give it more flavor.

You sure sold that recipe with those two last photos. I am not a sweet eater but you could tempt me after seeing the photos

Thanks everyone. Like it said, the recipe needs tweaking. But its a good starting base.

It looks very good!
As to tweaking, maybe some whipped cream on top might cut the sweetness and also hide the bananas if they try to oxidize. I would probably try adding banana pudding mix if you have a recipe for banana cake and merging the recipes from that point. Toasted pecans in between the bananas also sound good.
