Vegetable soup from the garden
I had an eggplant, zucchini, hot peppers and tomatoes to use up. I made a vegetable soup and added pastina pasta (small stars) to it to help it. It was so delicious. I roasted the veggies with Italian spice and then added them to the soup. The egg plant just fell apart, so I scooped out the innards and threw away the skin. This soup was full of veggies and vitamins! So delicious. I froze half of it because we were done eating soup after 2 days! I also used some corn and beans that I had frozen earlier this year in the soup. It was made with the usual suspects, celery, onions, bell peppers and the roasted veggies.

Bergy, I seem to be addicted to roasting fresh veggies. I have 4 zucchini to use, so I am going to roast them and freeze them for this winter. Easier than blanching and I think they will hold their shape better after being frozen. We shall see!
