Fish w/Roasted Beet Salad and Mashed Potato Cakes

Two new recipes, just posted.
The fish, simply pan sauteed with an Italian bread crumb crust and roasted lemon to squeeze over the top. Very easy dinner.

There are scallions in those beets ... For some reason, they are all hiding, lol.

I actually had 2 for breakfast w/poached egg and fruit. But this am, I used cottage cheese vs sour cream; not exactly healthy, but I tried,
I still have 3 I froze for another night. Four meals with 1 batch of mashed spuds.

Thx B, I love the cakes. My mashed spuds had broth and ricotta; so, they were fairly light to start with (but, you can use any recipe).
Just added an egg, cheese, flour, scallions, parsley is all. Mix and pan fry. But 2 1/2 cups of spuds makes a lot of cakes. So, you could easily cut in half; or freeze what you don't eat. They freeze well. You can reheat in a dry saute pan to crisp back up.
Served with a little apple sauce and a salad, it could be a light dinner for me.
