Ricotta Zucchini "Cannelloni Roll-ups

Only these weren't roll-ups. I could not get the right size zuke to get wide enough slices to do the roll-up so I cut 1/4"slices of the zuke, cut a hole in the center of each slice and placed a teaspoon of the mixture on each. Perfect. But I would have loved to roll them. Very nice, mild but flavourful combination. Very healthy appie.

I have been using a similar recipe for these as well for catering. They are great as appies or a starter dish too. Everyone always love them.
Your pics are wonderful. Even cut, it still looks delicious. I love #2.
