My "BIG" canning day.

There was a day a few years of yore when I did have big canning days but this is all I can muster now :( :( :( . :D :D :D :D :D
I had to make two jars of these pickles. One for a friend and one for us for Christmas. As far back as I can remember (and that's a good long time) there have always been Aesier on our table at Christmas. They are a lovely sweet, peppy pickle. Very easy to make and your friends will love you if you give them a jar. You need big fat cukes, fat but they must be very firm and not yellow.
My garlic lady gave me 3 cukes that were just perfect to make these 2 jars.

I still haven't made these; but, I intend to. They look so good. I like the angle on #2. Very nice.

Mmmmmm, I wanted to give that recipe a try last year and forgot all about it. I will try and fatten up my cukes for this :D

I guarantee that you will love them ! Just be sure that the cukes are nice and fat but very firm. You want the flesh left after scooping out the seeds to be apprx. 1/2 inch

My armish and farmers market always seems to have great cukes year round.

Did you use the smooth skinned cukes or the Kirby's (ones with dimples?)
If you used the smooth skinned ones I wonder how the English cukes would work in those? Have you tried it? They have little to no seed.

Sue even the English cukes have too many seeds. You need a good heavy cuke that you can scoop out all the seeds

Lee the nice thing with this recipe is that you can make as few jars as you want and they take minutes to make.
