Roasted Garlic

I picked up this year's ten pounds of garlic and had just a few heads from last years so I roasted them. Just snip a bit off the to. drizzle with olive oil, 375 oven for 45 minutes. Now you can use, or like I do stick it in a zip lock
and freeze

How on earth do you keep garlic for a year?? Mine starts sprouting after a month or so.

Felix it is so simple. I put the garlic in a mesh bag, then in a wicker laundry hamper and set it on top of my downstairs fridge. No one believes me until I show them. The last ones that I roasted today were starting to sprout but still in good shape to use.

Huh. I'll have to try that! I'd love to stock up in the summer when the CSA has huge heads, but I never dare get more than a few of them. Thank you!

roasted garlic is delicious. Mine never looks so pretty as yours - the first photo is really nice!

Looks very delicious! I was wondering too, how you managed to keep them for a year! Awesome tip! Is the fridge in your basement?
