It looks wonderful. And, I have to admit. Never seen or ate a white beet. The red obviously are common. Golden I love, but harder to find. White, that is new to me. I will have to keep an eye out for them.

Grand photographs Bea! I love beets of all colors ( the red are better for you ) and I can nexer get enough of beet greens ( or Swiss Chard for that matter ). Folks aound here never heard of eating the greens but we have been eating them forever!

Thx Kim These beets look like a big radish before you peel them because they are red on the outside. And they are variegated red and white raw, the red lines disappear as you cook the beets. Thx Lee. My grandmother used to make a salad with the raw beet greens also. I should look around and see if she wrote that recipe out in her recipe book. I remember her cleaning the greens and then tossing them with oil, vinegar, sugar, salt, pepper and pressed garlic cloves, she would then add different raw veggies, whatever was in season.
