Leftovers are a good thing

Post by Kchurchill5 » Wed Aug 13, 2014 6:34 am

I took my pine nut crusted fish fillet; added lettuce, tomato, thin sliced red onion; and, a remoulade sauce that I made with sundried tomatoes (vs ketchup) and added capers.

On the side; my basil tomato Feta pasta I made the other night. I kept the basil out of the leftovers (so it didn't wilt). I added my leftover lonely hard boiled egg, scallion, cucumber, and more dressing.

Thx guys, appreciate your comments. It was pretty good. 1 meal revamped into 2. The pasta was really good day 2; and, I actually got a little bowl for lunch today.

I'm really glad I made that extra fish fillet. I didnt plan it; but, when I opened my bag (fresh caught); there were 2. It made a great sandwich.
