Meatloaf (leftover) Goulash

Turned out really good.
2 slices of meatloaf, 1/3 box pasta, 1 can diced Italian tomatoes, 1/2 cup my veggie seasoning blend (onion, celery, red/green peppers), 3/4 cup mushrooms, cheese.
Saute, top with cheese and bake. Instant dinner. Enough for dinner and a light lunch.
I do so love leftovers!

What a great way to use up meatloaf. That looks and sounds delicious!

I cut the meat loaf. Then, after the veggies sweated I add the meat loaf and a little broth - it helped to break it up a bit. Then, added the tomatoes and pasta. Toss is a dish with the cheese and baked until melted.

Yeah, it was pretty good, and easy.
But, thx guys, appreciate it. I was happy how it came out.

Very good use of leftovers Kim! I sure love goulash! Reminds me of my childhood even though I still make it all the time.
