Wintered Parsnips

A neighbour gave me a half dozen parsnips that have been in the ground over the Winter. They are so sweet and good. A bit of a workup because they are so huge and you have to core them but they are sure worth it

Bergy, it is so ironic that you posted these! My mom said a neighbor dropped off a bunch of parsnips, and she was wanting dh to go pick up, she likes them, but eating for 1, she doesn't need that many.

Saved recipe, as I was trying to think what else to do with them, besides a roast. Yummmm
